Chili Anaheim (Capsicum annuum) is one of the most classic and popular American-Mexican varieties, valued for its mildly spicy, large fleshy fruits and exceptional culinary versatility. This is a chili found in many traditional recipes in the United States and Mexico.
The fruits are long, wide and thick-walled, usually between 15 and 20 cm, with a soft, aromatic texture. In the immature stage they are light green, and when fully mature they become red. The flavor is mild, slightly sweet and very pleasant, making Anaheim ideal for those who want a chili flavor without being overly spicy.
Anaheim is a great choice for stuffed (chiles rellenos), grilling, stewing, sauces, fresh use, salsas, as well as for drying, when in the red phase it becomes a similar variety known as California Chile. Due to its size and meat, it is also extremely suitable for cooking and baking in the oven.
