Eggplant Grapes under olive oil<\/strong> (Solanum melongena<\/em>) is a rare, traditional Italian variety, bred specifically for small, firm fruits<\/strong>, which are ideal for pickling "sott'olio" (in olive oil)<\/strong>. Fruits grow in large clusters ("grappoli")<\/strong>, usually several together on one stalk. They are small, elongated or slightly pear-shaped<\/strong>, with smooth dark purple to almost black skin<\/strong>. The meat is firm, with few seeds<\/strong>, which is key when investing, as it maintains an excellent texture even after heat treatment.<\/p>\n

The taste of fresh fruit is gentle, with a little bitterness<\/strong>, but it is best expressed in the traditional preparation: sliced, salted, lightly pressed and marinated in vinegar and olive oil with garlic, parsley and spices.<\/p>\n

The plant is medium lush<\/strong>, well branched and grows to about 60\u201380 cm<\/strong>. Rims abundant<\/strong>, often in waves, and forms decorative clusters of numerous small fruits. It ripens medium early<\/strong>, tolerates heat well and is suitable for the garden, raised beds or larger pots.<\/p>\n
